Greek-Style Chicken Gyros - Recipe

This September has marked the return to some kind of normality for us, with the start of the school term and with more of us heading into work, however periodically!

When things get busier it’s also handy to have some quick and easy recipes to hand that don’t require too much preparation, and this recipe does exactly that. This Greek-Style Chicken Gyros recipe combines the fresh flavours from tomatoes, lettuce and onions with a deliciously marinated chicken to create a scrumptious and satisfying mid-week meal.

I used Athleat’s free-range chicken breast in this recipe, alongside a few other everyday fresh ingredients that most households would usually have in stock. The chicken can even be marinated a day in advance, meaning these make-ahead chicken gyros can be an even quicker recipe!

Preparation time: 40mins
Feeds: 2-3 people

Ingredients: 

  • 400 grams Athleat’s free range chicken breast, diced

For the marinade:

  • 2 tablespoons olive oil

  • 1 tablespoon freshly squeezed lemon juice

  • 3 cloves garlic, minced

  • 2 teaspoons dried oregano

  • 1 teaspoon dried thyme

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

To serve: 

  • 6-8 pita flatbreads

  • Shredded lettuce 

  • Cherry tomatoes, quartered

  • 1 red onion, thinly sliced

  • Tzatziki (optional)

Method:

  1. Combine the chicken with marinade ingredients, including the olive oil, lemon juice, garlic, oregano, thyme, paprika, 1 teaspoon salt and 1/2 teaspoon pepper. 

  2. Allow the chicken to marinate for at least 30mins, this can be kept in the fridge over night

  3. Preheat the grill to medium heat. Add chicken to the grill and cook, turning occasionally, until chicken is completely cooked through. This should take about 8-10minutes

  4. Next warm the pitas on the grill for 1-2minutes per side

  5. Prepare the pitas for serving by halving them and filling with chicken, lettuce, tomatoes, red onion and tzatziki (optional).

  6. Once the pittas are filled, serve these Greek-style chicken gyros immediately. 

With minimal preparation and the ability to marinate and store the chicken in the fridge in advance, this is a great recipe for a quick mid-week meal.
