As we can’t go out for date nights at the moment, it’s now even more important to spend quality time at home with your other half. But as many of us have been cooking a lot more than usual at the moment, it can sometimes seem like a chore to cook up another meal for a date night. But there are quick and easy meals that can still be special, and this is one of them!
Young’s Seafood has a great Gastro range, which uses restaurant quality fish paired with a variety of flavours to create a delicious meal with minimal effort. For this recipe I used their Breaded Sweet Chilli Fish Fillets and paired with an Asian slaw to create a quick but delicious date night meal.
This Asian slaw is a great addition to the breaded fish as the use of crunchy red cabbage and sharp shredded mango compliment the sweet chilli flavours in the fish.

Serves 2
Cooking time: 30mins
Ingredients:
2 Young’s Gastro Breaded Sweet Chilli Fish Fillets
For the slaw:
½ Red cabbage
½ Raw mango
1 Red pepper
1 Red onion
2 Spring onions
Ginger
For the dressing:
2 tablespoons Soy sauce
1 tablespoon Ponzu cause
1 teaspoon Honey
Lime
Method:
Pre-heat the oven. When ready place the breaded fish on a baking tray and into the oven for the recommended amount of cooking time.
Prepare the slaw whilst the fish is cooking. Slice half a red cabbage, 1 red onion and 1 red pepper into thin long slices.
Slice half of the raw mango into thin strips for use in the slaw. Also prepare the spring onions and ginger but cutting into thin slices.
Add all the ingredients into a large bowl.
Prepare the dressing in a smaller bowl. Mix 2 tablespoons of soy sauce, with 1 tablespoon of ponzu sauce. Add 1 tablespoon of honey and squeeze the lime into the mixture too.
Pour the dressing onto the slaw and mix well.
Once the breaded fish is ready, serve with a layer of Asian slaw and the fish on top. Enjoy with a wedge of lime served on the side.
This Asian slaw can be effortlessly cooked up in the time it takes for the fish to cook in the oven, meaning you can have a fabulous date-night meal which is ready in 30mins!
